Lok Lak Khmer Omelet
Lok Lak is one of those Khmer omelet dishes I cannot go without. It is simply delicious and simple to cook too. It goes well with white rice. If you do not like beef, you can substitute beef with chicken or anything else you fancy.
INGREDIENTS
150g chicken breast - sliced or diced
1/2 tbsp sugar
1/2 tsp light soy sauce or MSG
1 tbsp oyster sauce
4 tbsp cooking oil
1 tbsp Thai chili sauce
2 tbsp chopped garlic
1 tbsp tomato sauce/ketchup
Salad
50gm long bean / string bean (cut into 3cm pieces)
1 small~medium tomato. (Sliced)
1/2 white onion (Sliced)
Pepper Sauce
1 tsp crushed/ground black pepper
1 tsp vinegar, lemon or lime juice
1/2 tsp salt
1/2 tsp sugar
1 tsp light soy sauce or MSG
1/2 tsp chopped garlic
2 tsp hot water
Directions
Season the meat using the oyster sauce, tomota sauce, black pepper, sugar and soy sauce. Set aside for at least 2 minutes to let the seasonings infuse into the meat.
Prepare the salad and pepper sauce.
Heat oil in wok or frying pan over high heat, but not too hot.
Stir in garlic, fry till slightly golden brown.
Stir in the seasoned meat and fry for about 2 minutes.
Add in the chili sauce, and give it a quick stir.
Remove from heat and serve on plate garnished with the salad and pepper sauce above.
Goes well with either steamed rice, coconut rice or french fries.
Option
Throw on an egg fried sunny-side-up if you like.
